Potatoes & Cauliflower ~ Aloo Gobi (Spice Blend Recipe)

“Aloo Gobi” - Potatoes & Cauliflower

The perfect accompanying dish for any Indian meal.

A healer! Turmeric infused, and gently spiced - aloo gobi has multiple health benefits. If you’re ever feeling poorly, make this with some plain basmati rice and fresh greek yoghurt.

This spice blend can be used on a variety of vegetables, not just potatoes and cauliflower. The added depth and flavour of the blend is also a great way to introduce young ones to vegetables!

Serves 4

Method:

1) Heat the oil in a shallow pan over a medium heat. Add the cauliflower florets, potatoes, ginger, and a pinch of salt. Fry for 5 minutes.

2) Cover and cook the vegetables for a further 5 minutes, stirring occasionally. If the mixture begins to stick to the bottom of the pan, add 4-5 tablespoons of water (or more if required).

3) Momentarily remove from the heat. Add the contents of the spice blend and 3-4 tablespoons of water. Cook for a further 5 minutes.

4) Add in salt and 200ml of water. Cover and simmer for 15 minutes, or until the vegetables are tender and the sauce begins to thicken.

5) Add a little more water if required to keep the sauce from becoming too thick.

6) To finish, mix in the butter, a pinch of ground black pepper, and the fresh coriander into the sauce.
